Prądnik bread — Kraków’s giant loaf: history and where to buy it

Prądnik bread (chleb prądnicki) is a huge oval or round rye-sourdough loaf weighing 4.5 or even 14 kg, sprinkled with rye bran. The first mention of it dates from 1421, and since 2011 it has been protected across the European Union with a Protected Geographical Indication — it may only be baked within Kraków’s city limits. Where does it come from, how do you recognise it and where can you buy it?

What does Prądnik bread look like?

It’s hard to mistake for any other bread. According to its specification it comes in two sizes: 4.5 kg (an oval loaf about 65 cm long or a round one about 50 cm across) and a whopping 14 kg (oval, 95–100 cm long). It has a dark crust sprinkled with rye bran and is made with rye sourdough from rye and wheat flour, with boiled potatoes and yeast.

It tastes best the day after baking, and thanks to the potatoes and sourdough it stays fresh for a long time — at least a week.

The history of Prądnik bread

In 1421 Bishop Wojciech Jastrzębiec of Kraków granted his cook Skowronek land in Prądnik in return for supplying bread — the oldest mention of the loaf. It was baked along the Prądnik river, where mills stood, in two separate villages, Prądnik Czerwony and Prądnik Biały (only incorporated into Kraków in 1910). A privilege of King John I Albert from 1496 allowed the Prądnik bakers to sell bread in Kraków once a week, at the Tuesday market, and they gained full trading rights in the city in 1785. According to tradition, King Stanisław August liked the bread so much on his visit to Kraków in 1787 that it was later sent to Warsaw.

In communist times Prądnik bread almost disappeared — it was available practically only at Kleparz market. After 1989 the baker Antoni Madej revived the tradition. In 2004 it won the “Małopolski Smak” award, in 2005 it was added to Poland’s List of Traditional Products, and in March 2011 the European Commission registered it as a Protected Geographical Indication. In 2023 it ranked 47th in TasteAtlas’s list of the world’s 100 best breads.

Where to buy Prądnik bread in Kraków
