Maczanka krakowska — what it is and where to eat Kraków’s “burger ancestor”
Maczanka krakowska is a bread roll cut in half, filled with slices of roast pork — usually pork neck — and generously soaked in gravy from the roast, flavoured with caraway and onion. It’s one of Kraków’s oldest street foods, known since at least the late 19th century. National Geographic called it “the great-grandmother of the burger”. Where did it come from, and where can you eat it in Kraków today?
What is maczanka krakowska?
The base is roast pork — neck or loin — sliced and served in a split roll. The key, though, is the gravy from the roast, seasoned with caraway and onion: the roll is drenched or dipped (“maczać” in Polish) in it, which gives the dish its name. In Kraków restaurants today you’ll also find versions with extras, such as horseradish, a fried egg or beetroot purée.
The burger comparison is a figure of speech, of course — but a fitting one: meat in a bun, eaten on the go, in Kraków decades before the first fast-food chains.
A short history of maczanka
The exact origins of maczanka are unclear. What’s certain is that it was eaten in Kraków by the end of the 19th century — according to National Geographic it was served in 1892. It was valued as a cheap and filling meal; Visit Małopolska says cab drivers and poor students were among its fans. Fun fact: despite its fame, maczanka isn’t on Poland’s official List of Traditional Products — unlike, for example, Kraków-style żurek soup or dry Kraków sausage.
Where to eat maczanka in Kraków
The best-known place is Andrus — Maczanka po krakowsku. Its restaurant is at Sienna 11, right by the Little Market Square, and Andrus’s food truck stands at the food truck square at św. Wawrzyńca 16 in Kazimierz. The pork neck is marinated and slow-roasted, and there are several variants on the menu. Maczanka made to the old recipe is hard to find elsewhere these days, so it’s worth asking for it in restaurants serving traditional Kraków cuisine.
Where to stay in Kraków
Both Andrus locations are close to our hotels. Best Western Plus Kraków Old Town at Świętej Gertrudy 6 is near the Little Market Square and Sienna Street, about 500 m from the Main Square. Hotel Regent at Bożego Ciała 19 in Kazimierz is right next to św. Wawrzyńca Street, where the food truck stands.
